Ingredients
  

  • 2 lbs chicken necks
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Clean the chicken necks and pat them dry.
  • Soak them in buttermilk for at least 1 hour (or overnight) for extra tenderness.
  • In a bowl, combine flour, cayenne pepper, garlic powder, onion powder, salt, and pepper.
  • Remove the chicken necks from the buttermilk, letting excess drip off. Dredge them in the flour mixture, pressing to coat evenly.
  • Heat oil to 350°F (175°C) in a deep skillet. Fry in batches for 6-8 minutes, flipping occasionally until golden brown.
  • Drain on paper towels and serve hot with ranch dressing or spicy mayo.

Notes

Pro Tip: Double-fry for an ultra-crispy texture! Fry for 4-5 minutes, rest for a minute, then fry again for another 2-3 minutes.
