Instructions
Rinse and pat dry the chicken necks.
Heat olive oil in a large pot, sauté onions, carrots, and celery for 4-5 minutes. Add garlic and cook for 30 seconds.
Brown the chicken necks for 3-4 minutes for a richer flavor.
Pour in broth, add potatoes, thyme, bay leaf, salt, and pepper.
Simmer uncovered for 45-60 minutes until the chicken is tender and the broth is flavorful.
Take out the bay leaf, season to taste, and serve warm.
Notes
Pro Tip: Mash a few potatoes into the broth before serving for a thicker, creamier texture!
