Ingredients
  

  • 2 lbs chicken necks
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 4 cups chicken broth
  • 2 potatoes diced
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • 1 bay leaf optional
  • Salt & pepper to taste
  • 1 tsp smoked paprika optional

Instructions
 

  • Rinse and pat dry the chicken necks.
  • Heat olive oil in a large pot, sauté onions, carrots, and celery for 4-5 minutes. Add garlic and cook for 30 seconds.
  • Brown the chicken necks for 3-4 minutes for a richer flavor.
  • Pour in broth, add potatoes, thyme, bay leaf, salt, and pepper.
  • Simmer uncovered for 45-60 minutes until the chicken is tender and the broth is flavorful.
  • Take out the bay leaf, season to taste, and serve warm.
